About the Machine
The machine consists of two separate units, 6” x 7” and 4” x 8” (it comes packaged in a 1 cubic foot carton) and weighs approximately 10 pounds.
A grinder is needed to grind the fruit – almost any type of home or laboratory food grinder is suitable, but the size of the holes in the plate should be from 1/8” to 3/16” in diameter. The fruit is ground and placed in the small cylinder, the temperature reading taken and the moisture content is then determined by the use of the chart for the particular dried fruit tested.
It operates on the Wheatstone Bridge principle and uses 110-volt A/C current with less than amp power draw. For other voltage, a step down transformer, available from any electronics store should be used. The moisture machine is generally considered accurate to +1%. It is calibrated with the tap plugs, which are included with the machine. The moisture determination method is published in the Journal of the Association of Official Analytical Chemist (AOAC) and is widely used by the dried fruit industry in the U.S.A. and internationally.
