HACCP: Don’t be Caught in the Dark
By Kathryn Heimann Dear ACFSQ/DFA and SCTC Members: In recent years the awareness of food-borne illness has prompted an increased focus on prevention. To address food safety concerns, retailers and grocers have begun to insist that their suppliers have effective food safety systems, including Hazard Analysis Critical Control Point (HACCP). As a result, numerous processors have adopted HACCP simply to maintain their current market share and customer base. Other processors have used their HACCP system certification as an advantage to expand their business by attracting customers that require these food safety systems. HACCP development, implementation and maintenance is also the first step towards meeting all other Total Quality Management System Audits. Shine the Light: HACCP Analysis Without knowing where you are, it is hard to decide where to go. A HACCP Analysis quickly assesses your current compliance. Based upon a brief visit to your company ACFSQ/DFA staff will prepare a detailed report about specific areas that need attention and/or development. The report also includes targeted recommendations to take to become compliant.
